Positive thought of the day: I made dinner three times this week, did laundry, paid my taxes, and dyed my hair. I'm pretty happy with that.

    1. It was store bought, so unfortunately not. I'm looking for veggie recipes, without spinach (allergies) though!

    2. Do you have Trader Joe's? They have a superb veggie lasagna (never looked to see if spinach is in it, since I don't have issues). I make a decent pasta sauce (crock pot) that just includes big portions of the veggies I have in my freezer, if they're "appropriate" for "Italian" sauce. If I want the sauce smooth, I'll just portion out a little of it and use my stick blender before I add it (like to pizza crust). Usually, I consume it "lumpy" though, 'cuz that helps to take up space between noodles (lasagna or otherwise).
